Crispy on the outside, soft and savoury on the inside, and loaded with herbs, buttery onions, and rich sausage—this is the gluten-free holiday side dish you’ll come back to again and again.

- 400g gluten-free sausage meat
- 100g gluten-free bread (cubed or crumbled)
- 200g onion, finely chopped
- 30g butter
- 1 tsp garlic powder
- 2 tsp mixed herbs
- Salt & pepper to taste
How to Make
Prep the Bread
Tear or cube your gluten-free bread into small pieces. Set aside or toast in the oven for a few minutes to crunch up.
Chop and Cook the Onions
Chop the onion into small chunks and set aside.
Melt 30g butter in a pan. Add finely chopped onions , salt and pepper and cook until soft, sweet, and lightly golden. Add the garlic powder and mixed herbs once the onions are soft.
Combine Everything
In a bowl, mix sausage meat, onions, garlic powder, mixed herbs, and GF bread pieces.
Season with salt and pepper. Use your hands or a spoon to combine well.
Shape or Dish It
Press into a baking dish or roll into individual stuffing balls.
Bake
Bake at 200°C for 25–30 minutes, or until golden, crispy, and cooked through.
