How to Make

Prepare the Cauliflower
Cut(or pour!) the florets into a pan of boiling water. Cook until al dente—softened but still with a little bite. Drain and set aside.
Start the Roux
Melt the butter in a saucepan over medium heat. Add 2 tbsp gluten-free flour and stir continuously until it forms a smooth paste. Cook for 1–2 minutes to remove the raw flour taste.
Build the White Sauce
Slowly pour in the milk, stiring constantly so no lumps form. Keep stiring until the sauce thickens and becomes silky. Next add a teaspoon of English Mustard, this will emulsify the sauce and give it a great taste and colour.
Turn It Into a Cheese Sauce
Remove from heat and stir in the grated cheese, continue to stir until melted, glossy, and smooth.
Assemble & Bake
Place your cooked cauliflower into an ovenproof dish, pour the cheese sauce all over, and spread evenly. Add more grated cheese across the top. Bake at 200°C for 25 minutes, or until golden, bubbling, and irresistible.
